My Winter Angel Food Cupcakes

    Hello, friends!!!  It's been a while since I last shared some words with you, huh?  Well, I'm finally giving myself some time to write to you, and I'm taking advantage the new year's just starting, and with it new opportunities are coming!  Who believes it?  -Everyone: I do!!!-  I really have new expectations for this year, and one of the plans I have {not a resolution, since we expect them to become true as if they were some sort of magic, and when things don't go the way we dreamed [dreamt?] we usually stop trying...} is putting a little more time into my blog, and be able to share the things I like to do, along with some tips that work better for me...  Are you ready?
   Well, I'll start by telling you a little story: a few days ago, my little ones and I had a big craving for cake, since a couple of days before I made one for a birthday and it went away fast.  So it was necessary to make another one, soon!  So I started looking trough my recipes, gathering ingredients, and then...  A not-so-nice surprise: I had no butter at home!!!  And did I mention that the last few days the weather has been soooo cold, it's scary?  So, when one has turned on the oven, and her house is nice and warm, she doesn't want to go out and buy ANYTHING!  So I had to quickly look for a recipe that didn't call for butter, and I was fortunate to find one...
   These cupcakes have a different consistency than the ones we are used to, and it uses a lot of egg whites, so that taste is notorious.  They're very light and fluffy; acceptably sweet, and with the right frosting they are almost perfect.  I recommend having them after a big nice meal, when you are really full, and you need just a little taste of sweet.  You can eat them in just one bite and they are so soft and small, that is like you didn't have any.  My little ones {9 and 4} loved them and just one cupcake wasn't enough.  It's been 5 days since I made them, and they're still asking for more!
   With all that said, I want to share with you some pictures of them, and then the recipe; I really hope you like the pictures so much, that you feel motivated to make them!

    Hola, amigos!!!  Ya hace buen rato desde la última vez que compartí algo con ustedes, ¿verdad?  Bueno, por fin me estoy dando un tiempecito, y estoy aprovechando que el año {2013} apenas empieza, y con él nuevas oportunidades!  ¿Quiénes lo creen así?  -Todos: YO!!!-  De verdad tengo nuevas expectativas para este año, y uno de los planes que tengo {no es resolución, porque por lo general esperamos lograrlas como por arte de magia, y al no suceder como lo deseamos, muchas veces dejamos de tratar...} es darle más tiempo a mi blog, y poder compartirles las cosas que me gusta hacer y darles los tips que a mí me funcionan...  ¿Están listos? 
   Bueno, comenzaré por platicarles que hace unos días mis peques y yo teníamos un grande antojo de pastel, porque un par de días antes hice uno para un cumpleaños y se acabó muy rápido, así que era necesario hacer otro ¡pronto!  Me puse a revisar mis recetas y a reunir todos los ingredientes que iba a necesitar... Y entonces...  Una no muy buena sorpresa:  ¡No tenía mantequilla!  Y cabe mencionar que en los últimos días ha estado haciendo un frío ¡de miedo!  Entonces, cuando una ya prendió el horno, y su casa ya está bien calientita, no dan ganas de salir a comprar ¡NADA!  Así que, rápidamente me puse a buscar una receta para unos cupcakes sin mantequilla, y tuve la fortuna de encontrarla... 
   Estos cupcakes tienen una consistencia diferente a la que estamos acostumbrados al probar un cupcake, y la mayor parte de la mezcla consiste en claras de huevo, así que ese sabor es un poco notorio.  Son muy ligeritos y esponjositos; son aceptablemente dulces y con el betún correcto, son casi perfectos.  Yo los recomiendo como postre de una buena comida, cuando quedaste muy lleno, pues los puedes comer casi de una mordida y tan suavecitos {y pequeños} que ni los sientes.  Jaja!  A mis chiquitos {de 9 y 4} les encantaron, y no se quedaron conformes con sólo uno.  Hoy ya hace 5 días que los hice, ¡y me siguen pidiendo!
   Habiendo dicho ésto, les comparto aquí unas fotos y un poco más abajo, la receta, espero les gusten las fotos, ¡como para animarse a hacerlos!

Winter Angel Food Cupcakes

~Instructions: 
Preheat oven to 325º F, and prepare mold with cupcake liners, approx. 24.
In a medium bowl whisk together confectioner's sugar, cake flour and salt.  Set aside.
In a large bowl, with an electric mixer on low speed, mix together egg whites, water, vanilla extract and cream of tartar until is frothy.
Increase mixer speed to medium and start adding the granulated sugar {add it in 1 tablespoon increments, on a period of 4 minutes}.
When all the sugar is added, increase speed to high and mix for another 3 minutes, or until mixture forms soft peaks {it should be glossy}.
Sift the dry ingredients into the egg mixture in two additions.  Fold gently using a rubber spatula.  Be careful not to over mix it, or you can deflate the eggs!
Gently spoon the mixture into the cupcake molds all the way up, since they won't fluff up in the oven.
Bake them for about 20 minutes, or until the tops are golden brown.
Cool them on a wire rack, and when they're ready you can frost them with whipped cream.

*To top the cupcakes I used "Cool Whip" {to taste}, or you can use heavy whipping cream, sweetened with a little confectioner's sugar.  I liked this topping because it's very light, and the cupcakes are very soft to serve with a heavier frosting.  Besides, that's what I had at home at the moment  :)  You can keep them in the fridge for one or two days, covered.

*It's important to use "cake flour" {which is very fine} instead of the all purpose one, for the measurements are different for each kind of flour.

~Instrucciones:
Precalentar el horno a 325º F,  y preparar el molde con los revestimientos {o papelitos} para cupcakes, aprox. 24.
En un recipiente mediano mezclar levemente el azúcar glass, la harina para pastel y la sal. Hacer a un lado.
En un recipiente grande, batir las claras de huevo, agua, extracto de vainilla y cremor tártaro a velocidad baja, hasta que la mezcla esté espumosa.  
Subir la velocidad a media y comenzar a añadir gradualmente el azúcar granulada {de cucharada en cucharada, en un intervalo de 4 minutos}.  
Cuando toda el azúcar esté incorporada, subir la velocidad de la batidora a alta, y batir otros 3 minutos, o hasta que la mezcla esté levantada, suave y brillante {ligeramente satinada}.
Cernir los ingredientes secos a la mezcla de huevo en dos partes.  Mezclar muy suavemente usando una espátula, y con un movimiento de abajo hacia arriba {conocido en inglés como "fold"}.  ¡Ten cuidado de no mezclar de más, pues se puede bajar {o desinflar} la mezcla!
Con una cuchara grande llena los moldes de los cupcakes hasta arriba, pues no se esponjarán más de lo que ya están.
Hornear por 20 minutos, o hasta que estén doraditos por encima.
Colocarlos en una rejilla para enfriar, y cuando estén listos, servirlos con crema {o betún} al gusto. 

*Para coronar los cupcakes usé "Cool Whip" {cantidad: al gusto}, una crema que ya está lista para usar, y la escogí porque es muy ligerita y me pareció perfecta para este tipo de cupcakes, pues son muy suavecitos como para usar un betún más pesado o grasoso -Además es la que tenía en casa.  :) 
Se pueden guardar en el refrigerador por uno o dos días, bien cubiertos.

*La "harina para pastel" es una harina un poco más refinada, y se usa en medidas un poco diferentes a las de la harina para todo uso, así que es importante usar de ésta, para lograr el resultado correcto.
